Al-Karak is a Jordanian city located within the Karak District in the Karak Governorate, south of the capital, Amman, about 120 km away. Its high mountains overlook the Dead Sea and the southern Jordan Valley. Among the most important landmarks of the city are the Karak Castle built by the Moabites, and the Al-Zahir Baybars Tower, in the middle of the city’s streets, a statue of Salah al-Din al-Ayyubi, in addition to the shrines of the prophets Noah, al-Khidr and Joshua bin Nun, peace be upon them. Karak is distinguished by its Mansaf dish, which is complete only with Jameed Karaki and Karak Pie. Mansaf is a meal consisting of rice, syrup, meat and ghee, and the syrup is liquefied jameed, which is originally made of milk.
